ingredients
tortilla chips, unsalted or only lightly salted
Toppings
salsa, your choice of heat
shredded cheese, cheddar, jack, marbled or Mexican cheese
seasoned ground beef
onions, green and/or sweet yellow, chopped
peppers, bell peppers or jalapenos
beans, cooked and seasoned pintos, black or refried
guacamole
sour cream
green or black olives
shredded chicken
directions
Spread the chips in a pile over a cookie sheet, pizza pan or similar pan or serving dish and warm up in a 250-300 degrees F oven until the chips just before they start to brown.
After the chips have warmed up in the oven, raise the temperature to about 350 degrees F and remove the chips.
Now comes the fun part. I start spreading the toppings except for the salsa on top of the chips trying to get a nice even coverage. I will spread some cheese, then ground beef, onions, more cheese, peppers, olives then more cheese until it is piled high. Then I put some fresh ground pepper, a little cumin, chili powder and maybe some Mrs. Dash for color on top cheese layer. Just a dusting. Now I spread the salsa over the top an pop it into the oven for about 15 minutes or until the cheese bubbles and browns. Add sour cream before serving. Serve to your salivating guests.
