Goat Cheese & Herb Phyllo Roll-ups

ingredients
4 sheets phyllo dough
butter
Filling
1 package goat cheese (chevere')
1 package cream cheese
1/2 cup grated Romano cheese
2 teaspoons Greek or Italian seasoning (or fresh herbs of choice)
2 cloves fresh garlic, minced
3 tablespoons extra virgin olive oil
1 egg
1/2 cup Italian bread crumbs
directions
Mix all of the above ingredients , this should form a nice thick paste make 4 layers of phyllo dough. Buttering each layer, spread some of the filling on to the buttered phyllo about a 1/2 inch wide. Roll twice and cut the dough it should look like a long stick. Continue making the cheese filling and phyllo sticks till all of the filling and dough are used up. They should be about as big around as your one of your fingers.
Coil them up in spirals, and on a non stick baking sheet. line them up and and bake at 375 degrees F for 10-15 minutes or until golden brown.
Neat tip: if you add chopped spinach to the filling. Stuff it in skinless boneless chicken breasts you've butterflied secure with a toothpick and bake, or they may be breaded fried, and finished off in the oven as well I'm sure some of you can think of a sauce to top it with maybe I was just messing around in the kitchen when I thought of it.
