CAKE

1 package (18.5 ounce size) spice cake mix
1 cup oats, uncooked (quick or old-fashioned)
8 ounces plain low-fat yogurt
3 eggs
OR
3/4 cup egg substitute
1/4 cup vegetable oil
1/4 cup water
1 1/2 cup finely chopped apple

TOPPING

1 cup oats, uncooked (quick or old-fashioned)
1/2 cup brown sugar, firmly packed
1/4 cup margarine or butter, melted
1/2 teaspoon ground cinnamon
whipped cream (optional)

directions

Heat oven to 350 degrees F. Grease and flour 13 x 9-inch baking pan.

For cake, combine first six ingredients.

Blend on low speed of electric mixer until moistened, mix at medium speed 2 minutes. Stir in apple.

Pour into prepared pan.

For topping, combine oats, brown sugar, margarine and cinnamon, mix well. Sprinkle evenly over batter.

Bake 40 to 45 minutes or until wooden pick inserted in center comes out clean.

Serve with whipped cream, if desired.

    After a brief search online to find a way to dress up a spice cake mix, I found this recipe. It was wonderful! Easy to make, and it looks gorgeous! I served it to a bunch of guests, and everyone raved about it - does not taste at all like a mix cake. This recipe is going to be a family favorite from now on.
