Pineapple-Orange Sunshine Cake

ingredients
1 box (18.25 ounce size) yellow cake mix
1/4 cup applesauce
4 eggs
1 can (11 ounce size) mandarin oranges in light syrup
1 container (8 ounce size) Cool Whip Light
1 package (3.4 ounce size) instant vanilla pudding
1 can (15.5 ounce size) crushed pineapple in juice
directions
Preheat oven to 350 degrees F.
In a large bowl, stir together cake mix, eggs and applesauce until moist. Beat by hand for 2 minutes. Coat a 9"x13" cake pan with cooking spray (can also use two 8" round cake pans).
Pour batter into prepared pan and bake for 30-35 minutes or until a toothpick inserted into the center comes out clean. Cool completely.
In a large bowl, mix together oranges, Cool Whip, pudding mix and pineapple until well blended. Spread over cooled cake. Store any leftover cake covered in the refrigerator.

Instead of using pudding for frosting I mixed a nobake cheesecake mix 8oz of sour cream and lg can crushed pineapple. before it gets too hard i fold in the coolwhip.....It was great!
