4 pita bread halves (i.e., pocket bread)
1 pound deli corned beef
1 cup sauerkraut
4 tablespoons spicy prepared mustard
4 tablespoons Thousand Island salad dressing
8 slices Swiss cheese
In each pita half, spread mustard on bottom and Thousand Island dressing on top. Layer each half with corned beef, sauerkraut and 2 slices Swiss cheese.
Microwave on High for 45 seconds to 1 minute (approximate time, as microwave ovens vary), or until cheese melts and sandwich is heated through.

Delicious!! Perfect for a pita bread sandwich and great for using leftover sauerkraut. Made with sliced chicken from the deli and homemade Thousand Island dressing. Only used half a slice of cheese on each half, and it was perfect! I know what we're having for lunch again tomorrow ;) Thanks for the recipe!
