The Reuben sandwich is a masterpiece, and when you're craving a Reuben nothing else will do. This recipe nails all the crucial points--rye bread, swiss, kraut, and has a homemade dressing for a major boost over bottled Thousand Island.
1/2 cup sour cream
2 tablespoons chili sauce
1 teaspoon prepared horseradish
1/4 teaspoon salt
8 slices rye bread
1/2 cup rinsed and well-drained sauerkraut
8 slices cooked corned beef
8 slices Swiss cheese
butter, softened
Combine the sour cream, chili sauce, horseradish, and salt in a bowl and mix until blended. This can be made ahead of time and stored in an airtight container in the refrigerator for up to 3 days.
Spread some of the dressing on one side of each slice of bread. Place about 2 tablespoons of the sauerkraut onto the dressing on the bread. Cover each with 2 slices of corned beef and 2 slices of swiss cheese. Top with the remaining bread, dressing side down.
Heat a griddle or large skillet over medium heat. Butter the outsides of the sandwich. Place on the griddle and cook, turning once, until both sides are lightly browned and the cheese is melty.
Serve the classic Reuben sandwiches hot.
Use high-quality ingredients like freshly sliced deli meat and Swiss cheese.
Make extra dressing to use on salads or other sandwiches throughout the week.
Be generous with the sauerkraut for a tangy kick in every bite.
Try different types of bread for a variation on the classic Reuben sandwich.
For a lighter version, you can use turkey or pastrami instead of corned beef.
Try adding a layer of mustard for extra flavor.

You can use store-bought Thousand Island dressing if you prefer or to save time.
Pastrami is a popular substitution for corned beef in a Reuben sandwich if you prefer a different type of deli meat.
While Swiss cheese is traditional, you can experiment with other cheeses like provolone or cheddar for a different flavor.
You can heat the corned beef in a skillet or microwave before assembling the sandwich.
If you prefer to serve the sandwich on toasted bread instead of cooking it in the skillet that is totally up to you.
Rye bread is traditional for a Reuben sandwich, but you can use another type of bread if you prefer. It should be a slightly coarse bread like rye, such as pumpernickel or sourdough.
Store any leftover dressing in an airtight container in the refrigerator for up to 3 days.
Wrap leftover sandwiches tightly in plastic wrap or foil and store them in the refrigerator for up to 1 day. Reheat in a toaster oven or skillet for best results.

I had the oddest craving for a reuben sandwich this week. Didn't want to have to cook corned beef from scratch since my grocery store only really carries it around st patricks day but I could get some good deli corned beef so I chose this recipe. It is the classic reuben that I know and love. Craving satisfied!
