It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).
Peach Honey

ingredients
1 pound fresh peaches, peeled, pitted, and sliced (or can use dried peaches)
3 tablespoons honey
1 teaspoon freshly squeezed lemon juice
directions
Blend all ingredients together in a food processor for 3 minutes to make a smooth puree. Pour into a squeeze bottle.
Peach Honey can be kept in the refrigerator for 1 to 2 weeks.
cook's notes
If using dried peaches, soak them in water to cover for 1 1/2 hours, until soft and pliable. Remove the skins with your fingers, then proceed with the recipe, adding an extra tablespoon of honey, if necessary, to compensate for the tartness of the dried fruit.

Turned out wonderful - more a peach butter texture not overly sweet. Used our own hardstone peaches which made the recipe a little more of a chore but well worth it. Thank you for posting.
