Cinnamon Peach Preserves

ingredients
2 pounds fresh peaches, peeled and thickly sliced
3 cups sugar
1 cup honey
1/2 cup water
2 pieces (3 inch size) stick cinnamon
directions
Combine peaches, half the sugar, honey, water and cinnamon in a Dutch-oven. Bring to a boil, stirring constantly until sugar melts. Reduce heat and simmer 15 minutes: stirring frequently. Remove from heat. Let stand 1 hour.
Add remaining sugar and bring to a rapid boil; stirring constantly until sugar melts. Boil uncovered until mixture registers 221 degrees F on a candy thermometer: stirring frequently. Remove from heat.
Skim off foam and remove cinnamon sticks. Immediately spoon in to hot sterilized jars leaving 1/4 inch head space. Wipe jar rims. Cover with metal lids and screw on bands. Process in boiling water bath for 15 minutes.

I only added half the honey because it sounded way too sweet to me. My peaches didn't give off a lot of liquid either and the mixture set up fairly well for me so I think for really good juicy peaches there might be too much liquid in the recipe.

I made this recipe this weekend and although it is really tasty it didn't set. I even used a thermometer to get the jam to the right temp.
