ingredients
2 quarts crushed elderberries
6 cups sugar
1/4 cup vinegar
directions
Combine berries, sugar and vinegar in a large sauce pot. Bring slowly to a boil, stirring until sugar dissolves. Cook rapidly until thick. As mixture thickens, stir frequently to prevent sticking.
Pour hot into hot jars, leaving 1/4 in head space. Adjust caps. Process 15 minutes in a boiling water bath.

I make a lot of crock pot jams .... can this one be done in the crock pot? Inquiring minds would like to know. It looks like a perfect candidate for this method. In the crock pot the berries are just cooked until the right consistency. The put into the prepared jars and then into the water bath.
