ingredients
2 foot-long Italian sandwich rolls
2 cans (6 ounce size) solid white albacore tuna, packed in water
2 tablespoons fresh lemon juice
1/4 cup extra-virgin olive oil
1/4 cup sliced black olives
1/4 cup thinly sliced green onion
2 hard-boiled eggs, coarsely chopped
1 medium tomato, chopped
1/2 cup mayonnaise
red lettuce leaves, washed and thoroughly dried
directions
Split the sandwich rolls in half lengthwise.
Drain the tuna and crumble into a mixing bowl. Lightly dress with the lemon juice and olive oil, then toss in the sliced olives, green onion, chopped eggs and tomato.
Spread the split rolls generously with mayonnaise and line with red lettuce leaves, then spread with the tuna mixture.
Cut each sandwich into thirds, and wrap individually in plastic wrap.
