Slow-cooked red onions are borderline magical. How does so much flavor come from such a humble ingredient? You'll want to put these sweet and spicy onion slices on burgers, sausages, or in cheesy quiches.
4 large red onions, quartered
1 tablespoon extra-virgin olive oil
1 teaspoon dried oregano
1/4 cup water or chicken stock
salt and pepper, to taste
hot pepper sauce, to taste
Add the onions to the crock pot. Drizzle the olive oil over them evenly then sprinkle with oregano. Stir gently to mix. Carefully pour the water in the bottom of the crock pot (trying not to wash off the oregano). Sprinkle with salt and pepper as desired.
Cover the crock pot and cook on low for 5-6 hours or until the onions are soft.
Adjust seasoning as needed and add hot sauce to taste.
