Pizza night is always a favorite, especially when you have great tasting pizza from some of the most popular restaurants.

Looking for a unique way to use those extra onions? This onion loaf combines sliced onions, milk, and pancake mix for an interesting twist.

5 white onions
1 cup milk
3 eggs, beaten
salt
2 cups Bisquick baking or pancake mix
oil, for deep frying
Slice onions and separate into rings. Soak rings in mixture of milk, eggs and salt in bowl for 30 minutes. Dip each onion ring in pancake mix and fry in oil heated to 375 degrees F until golden brown. Pack fried onions solidly, but loosely, without pressing, in a 8x4 loaf pan. Bake at 400 degrees F for 10-15 minutes. Turn onto a plate.

Had this at a restaurant lately and was on a mission to make it at home. Serve it with a spicy mayo or ranch dip. It's so good!
