The apples and onions are golden brown and glistening with that tantalizing mix of sweet and savory. Perfect accompaniment to roasted or grilled meat.
6 tablespoons extra-virgin olive oil
4 Granny Smith apples, peeled, cored and sliced in wedges
2 stems fresh thyme
2 bay leaves
2 tablespoons butter
3 large white onions, peeled and sliced
Kosher salt, to taste
freshly ground black pepper, to taste
Heat half of the oil in a large skillet over medium-high heat.
Add the apples, thyme, bay leaves. Cook, stirring occasionally, until the apples are golden brown but still firm, about 5 minutes.
Remove the skillet from the heat.
In another skillet, heat the remaining oil over medium-high heat. Add the butter and onions. Season to taste with salt and pepper.
Reduce the heat to low and cook, stirring frequently, until the onions are soft and browned, about 25 minutes. Discard the thyme and bay leaves.
Serve warm over pork chops, pork roast, or other cut of meat.
