These onion squares are somewhere between a pizza and a quiche, but they're tasty however you slice them. Serve them up for brunch or even breakfast with some runny eggs; the flavor of caramelized onions goes well with pretty much anything.

2 cups sliced onion
3 tablespoons butter
2 cups sifted flour
2 teaspoons baking powder
1 teaspoon salt
1/4 cup shortening
2 tablespoons chopped fresh parsley
1 cup milk
1/2 cup grated Cheddar cheese
Preheat the oven to 425 degrees F. Grease an 8-inch square baking dish.
In a skillet over medium-high heat, melt the butter and saute the onions until soft. Remove from the heat and set aside.
In a bowl, combine the flour, baking powder, and salt. Mix well. Cut in the shortening with a pastry blender or two forks. Stir in the parsley then slowly add the milk to the mixture while stirring until the dough is moistened. Pour the mixture into the prepared baking dish. Evenly spread the cooked onions over the base. Top with the grated Cheddar.
Place the baking dish in the oven and bake at 425 degrees F for 20 minutes or until the crust is set. Cut into squares and serve hot.
