Italian Marinated Tomatoes

Serve these zesty Italian-style marinated tomatoes as a salad or drain well and use on sandwiches.

ingredients
3 medium ripe tomatoes, sliced
1/4 cup red wine vinegar
3 tablespoons water
2 tablespoons vegetable oil
1 tablespoon chopped fresh parsley
1 teaspoon dried Italian seasoning
1 teaspoon grated onion
1 clove garlic, minced
1/4 teaspoon freshly ground black pepper
directions
Place the tomatoes in a shallow, non-reactive container.
Whisk together the vinegar, water, oil, parsley, Italian seasoning, onion, garlic, and black pepper. Pour the marinade over the tomatoes. Cover the container and place the tomatoes in the refrigerator to marinate overnight (or a minimum of 8 hours).
Remove the tomatoes from the refrigerator about 15 minutes before serving.
