ingredients
6 ounces Hen of the Woods mushrooms
1 clove garlic, minced
2 tablespoons olive oil
2 tablespoons fresh parsley, chopped
1 tablespoon shallots, minced
directions
Rinse mushrooms lightly and trim any rough parts if necessary. Divide into smaller clusters and set aside.
In a medium size skillet, heat oil and saute mushrooms for about 15 seconds. Add salt and pepper and saute for another 15 seconds.
Stir in parsley, shallots and garlic. Cook for 2-3 minutes. Remove from heat and serve as a side dish.
