ingredients
1 cinnamon stick (3")
1 whole cracked nutmeg
4 cups red wine vinegar
1 tablespoon whole cloves
1 tablespoon allspice
1 tablespoon black peppercorns
directions
Place spices in glass jar or crock and cover with vinegar. Place in cool place for 4 weeks. Taste occasionally to check vinegar's flavor.
When ready, use a coffee filter or several layers of cheesecloth to strain the mixture. Bottle and cork the spiced vinegar, then store in a cool dark place.
