3 slices fresh ginger root, finely chopped 1/2 cup vinegar 1/2 cup soy sauce 1/2 teaspoon salt

Combine the ginger, vinegar, soy sauce, and salt in a blender or food processor. Mix well until blended. Use anywhere you want a more pungent vinegar taste (substitute in equal amounts of vinegar called for in a recipe).
Store leftovers in a tightly covered container in the refrigerator for up to a week.
