ingredients
1 tablespoon black peppercorns
3 cloves garlic, peeled
6 dried red peppers (chiles japoneses)
1 dried chipolte chili pepper (gives a smoky flavor)
5 long sprigs fresh basil
5 long sprigs fresh oregano
2 sprigs fresh cilantro
1 bottle white wine vinegar
directions
Slide all herbs into the bottle and pour white wine vinegar over. Re-seal and let infuse for three or four days.
Try this vinegar in fresh salsa, guacamole or splashed over fajitas as they sizzle on the pan.
This is excellent in chili, white chili, taco or burrito filling as well as sour cream enchiladas or Mexican lasagna.
