ingredients
1 quart white or red wine vinegar
3 hot red or green peppers, carefully seeded and coarsely chopped
3 tablespoons minced chives
6 whole chive flowers
directions
Mix vinegar, peppers, minced chives and half of the flowers in a plastic aging container and seal tightly. Age for 4 weeks.
Strain through layers of cheesecloth until clear.
Place a pepper ring or two and 1 or 2 fresh chive flowers in 8-ounce glass bottles. Fill with strained vinegar.
Label and cap with corks dipped in wax or regular screw-on plastic lids.
