Vodka-Cured Salmon With Blood Orange Juice

ingredients
16 Thin slices raw salmon
2 shallots, finely chopped
1 Leek, finely chopped into 3mm pieces
2 tablespoons vodka
1 Ripe blood orange, juice of
1 teaspoon sea salt
freshly milled black pepper
Few sprigs mizuno leaves or rocket
1 Lime to finish, juice of
directions
Lay out the thin slices of salmon on plates, 4 per plate. Sprinkle each plate evenly with the shallot and leek.
Mix together the vodka and orange juice, divide into equal portions and trickle 1 portion on to each plate to cover the salmon.
Just before serving, sprinkle lightly with sea salt and freshly ground black pepper and the lime juice. Garnish with mizuno leaves or rocket and serve immediately.
