serves/makes:

ready in:
  30-60 minutes

ingredients

4 cups water
2 cups white long-grain rice
2 teaspoons butter
1 teaspoon salt
3/4 cup honey
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1 can (16 ounce size) mandarin oranges, well drained
1 can (15.5 ounce size) fruit cocktail, well drained

directions

Bring the water to a boil over high heat in a large saucepan. When boiling, add the rice, butter, and salt.

Stir well to mix then cover the pan. Reduce heat to a simmer and let the rice cook without lifting the lid for 15-20 minutes, or until the rice has absorbed all the water.

Place the rice in a serving bowl. Add the honey, ginger, and cinnamon and mix well.

Add the oranges and fruit cocktail and toss lightly to combine.

Serve hot.

recipe tips

For added flavor, consider toasting the rice in the butter before adding the water.

Substitute agave nectar or maple syrup for honey for different flavor variations.

Add a sprinkle of toasted coconut or chopped nuts.

Try different canned fruits like pineapple or papaya to change up the flavor.

Add a squeeze of fresh lime juice to brighten up the flavors before serving.

Try adding a pinch of cayenne pepper or crushed red pepper flakes for a hint of heat to balance the sweetness.
