30-60 minutes
ingredients
15 large scallops
2 cups milk
1 teaspoon each salt and pepper
2 tablespoons butter, divided
2 tablespoons flour
1/2 pound mushrooms, sliced
4 tablespoons medium sweet white wine or sherry
1 pound fresh mashed potatoes
directions
Clean the scallops and cut in half, then simmer in the milk for 15 minutes. Strain, reserving the liquid.
Heat 1 tablespoon of the butter and stir in the flour. Cook for about a minute, stirring. Then add the milk gradually, stirring all the time to avoid lumps. Season with salt and pepper.
Add the sliced mushrooms and simmer for about 10 minutes longer. Then add the sherry or wine and finally the scallops.
When hot, transfer to an ovenproof dish and cover with mashed potatoes, making sure they cover the fish right to the edges. Dot with the remaining butter.
Bake in a moderate oven, 350 degrees F, for 20-30 minutes or until the top is turning brown.

They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.
Ranking #1 in nearly every "favorite cookie" poll, the chocolate chip cookie is pretty much the go-to cookie of choice for both kids and grownups alike.
