1 1/2 pound beef chuck roast, trimmed and cubed
2 tablespoons butter
1/2 cup smoked pork shoulder, cut in 1/2-inch strips
2 medium onions, thinly sliced
1 clove garlic, minced
1 medium carrot, cut in 1/2-inch slices
1/4 cup parsley, chopped
1 bay leaf
1/2 teaspoon salt
1/8 teaspoon black pepper
1/4 teaspoon dried thyme
1 tablespoon tomato paste
1 cup dry red wine
1 can (4 ounce size)sliced mushrooms

Bring to a boil, reduce heat, cover, and simmer until meat is very tender (about 2 hours).
With a slotted spoon, remove meat and vegetables to a serving dish. Keep warm.
Bring cooking liquid to a boil and cook, stirring frequently, until reduced and slightly thickened. Salt to taste.
Pour over meat and serve.
