Saffron White Wine Pasta

ingredients
1/4 cup dry white wine
1/4 cup water
1 teaspoon crumbled saffron threads
2 1/4 cups unbleached all-purpose flour or durham semolina flour
2 large eggs
water, as needed
directions
In a small saucepan, combine the wine, water, and saffron. Bring to a boil. Remove from the heat and let cool.
Place the flour in the bowl of the food processor. Add the eggs one at a time with the motor running along with the wine/saffron mixture. You may need to add a few drops of water if the dough isn't pulling together.
Turn dough out onto a floured board or counter. Knead for 6-8 minutes or until the dough springs back when pressed gently.
Divide the dough into 4 pieces, wrap in plastic wrap, and refrigerate for at least 45 minutes.
At this point the dough can be put through a pasta roller or rolled out by hand and cut into desired sizes.
