Penne With Shrimp & Vegetables

ingredients
2 tablespoons olive or vegetable oil
2 medium zucchini, cut into 2" strips
1 tablespoon shallots, minced
1/2 pound shrimp, medium, peeled & deveined
1 medium yellow bell pepper, cut into 2" strips
1 can (14.5 ounce size) diced tomatoes with roasted garlic, undrained
1 tablespoon capers
8 ounces dry penne pasta, cooked, drained and kept warm
directions
Heat oil in large skillet. Add zucchini and shallots; saute 1 to 2 minutes or until zucchini are crisp-tender. Add shrimp and bell pepper; saute 2 to 4 minutes or until shrimp turn pink.
Stir in undrained tomatoes, olives and capers; simmer uncovered 2 minutes. Serve over pasta.
