Chicken Cacciatore with Rice

ingredients
1 cup uncooked long-grain rice
2 tablespoons olive oil
1 large onion, chopped
2 cups sliced fresh mushrooms
3 small zucchini, sliced diagonally
1 pound boneless skinless chicken breasts, cut into 1" chunks
1 can (14 1/2 ounce size) diced tomatoes with Italian seasonings
directions
Cook rice according to package directions; keep warm. Heat oil in a large skillet over medium-high heat. Add onion, mushrooms and zucchini; cook for 3 to 5 minutes or until tender. Add chicken; cook for 5 to 7 minutes or until no longer pink. Add tomatoes, season with salt and pepper to taste; cook until thoroughly heated. Serve over rice.
