ingredients

2 tablespoons olive oil, divided
2 onions, finely chopped
4 cloves garlic, minced
1 dried oregano leaves, crumbled
1/2 teaspoon salt
1/2 teaspoon cracked black peppercorns
8 ounces cremini mushrooms, trimmed and sliced
1 cup dry white wine or lower-salt chicken broth
1 can diced tomatoes, including juice
12 skinless bone-in chicken thighs
2 dried red chile peppers, optional
1 green bell pepper, diced
4 cups broccoli florets, blanched

directions

In a skillet, heat half of the olive oil over medium heat for 30 seconds. Add onions and cook, stirring, until softened, about 3 minutes. Add garlic, oregano, salt and peppercorns and cook, stirring, for 1 minute.

Add mushrooms and toss to coat. Add white wine and tomatoes with juice and bring to a boil.

Arrange chicken over bottom of slow cooker stoneware. Cover with sauce. Cover and cook on Low for 6 hours or on High for 3 hours, until juices run clear when chicken is pierced with a fork.

Using a slotted spoon, transfer chicken to a heatproof serving dish and keep warm in oven.
