2 full racks baby back pork ribs
3/4 cup hoisin sauce
1 ounce fresh ginger, peeled and finely chopped
4 ounces maraschino cherries
1/2 cup rice wine vinegar
4 scallions, green parts only, chopped

directions

Have on hand a 5-to 7-quart slow cooker.

Cut the racks into 3 ribs each and place them in the slow cooker. Cover with hoisin sauce, ginger, cherries, and rice vinegar.

Add enough water to just cover the ribs. Cook on high for 5 to 6 hours or until the ribs are tender.

Sprinkle with scallions.

    This was amazing. I've made it with ribs, skirt steak and pork butt. Huge hit with everyone every time. I go a little longer than 6 hours. When done, I remove the meat and boil down the sauce in a pot 15 minutes or so and the sauce is ooey gooey delicious!

    I tried this recipe from a crock pot recipe book . It did not taste good. The ribs were broiled since they were covered with water, so the sauce did not stick. But the ginger and rice vinegar made a taste I did not like and we could not eat it. It was almost like no flavor but you could smell ginger. I tried putting the ribs in an oven with more sauce but it did not change the taste.

    This was horrible. After spending over $25 on ribs alone, I had to throw them away. They were discusting. After cooking for 6 1/2 hours in the crock pot they came out boiled. The recipe calls for water to cover. What does that mean????? I put in around 6 cups of water in order to cover the ribs. When everything was done, the sauce was so watery that there is no way it would boil down. I tossed the whole thing. Don't use this recipe.
