If you're looking for a hearty fall-flavored stew without all the extra fat, here it is. Apples and sauerkraut add some sweet and tangy flavors to this warming sausage stew.

1 1/4 pound lowfat turkey sausage or kielbasa, cut into 1-inch pieces
1 1/2 pound sauerkraut, drained
2 1/4 apples, peeled, cored and cut into rings
3/4 onion, sliced into rings
2 pounds red potatoes, quartered
1 1/2 cup chicken stock
1/2 teaspoon caraway seeds
1/2 cup non/lowfat Swiss cheese, shredded
Place half the sausage in a crockpot and top with sauerkraut. Top this mixture with remaining sausage, apple, onion and potatoes. Add stock and caraway seeds.
Cover and cook on high for 4 hours. Top with cheese and serve.

Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.

This recipe has a delicious Octoberfest taste to it. The crockpot did a really good job with this. The sauerkraut gave it a nice tang.
