ingredients
10 cups chopped turkey or chicken
5 small cans sliced mushrooms
46 ounces cream of mushroom soup
3 pounds grated sharp cheddar cheese, divided
1 1/2 cup red bell pepper, chopped
1 1/2 cup green bell pepper, chopped
2 1/2 cups chopped onion
3 cups broth
salt and pepper, to taste
8 cups vermicelli, uncooked and broken into 2 1/2 in. lengths
1 pound buttery round crackers, crushed into crumbs
directions
Cook the broken vermicelli, about 8 minutes in boiling water. Drain well and mix with the ingredients, except for half the cheese and crumbs.
Combine the reserved cheese and crumbs, set aside.
Pour pasta mixture into 2 steam table pans, sprayed with nonstick stick and cover with cheese/crumbs. Bake at 350 degrees F for about 45 minutes.
