ingredients
1 1/2 tablespoon honey
1/2 cup warm water
1/4 cup soy oil
2 cups whole wheat flour
cornmeal (for lining pan)
1 tablespoon yeast
1/2 cup milk
1 1/2 teaspoon salt
1 cup soy flour
directions
In a large mixing bowl, dissolve first the honey and yeast in warm water.
Scald milk and let it cool.
Add milk, oil and salt to yeast. Slowly add flour and turn dough out on floured board to knead. Place in a lightly oiled bowl and let dough rise 1 hour.
Punch down and knead again. Let it rise for another 30 minutes.
Punch down and shape into flat circles, 3-inches in diameter and 1/2-inch thick. Place on an ungreased cookie sheet; sprinkle with cornmeal. Also sprinkle cornmeal on top of muffins. Let rise another hour.
Bake in electric skillet at 325 degrees F about 5 to 10 minutes on each side.
