ingredients
1 1/2 ounce wheat bran
2/3 cup low-fat (1%) milk
1/3 cup maple syrup
1/4 cup unsweetened applesauce
1 egg, slightly beaten
1 cup all-purpose flour, PLUS"PLUS" means this ingredient in addition to the one on the next line, often with divided uses
2 tablespoons all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground allspice
1/2 cup raisins

In a large bowl, combine bran and milk. Let stand 20 minutes. Stir in syrup, applesauce and egg.
Preheat oven to 400 degrees F. Spray 2 3/4" muffin cups with nonstick cooking spray.
In medium bowl, sift together flour, baking powder, baking soda, salt and allspice. Add bran mixture, stirring until just combined. Stir in raisins.
Spoon batter evenly into prepared cups, filling each about two-thirds full. Bake for 18-20 minutes, until toothpick inserted in center comes out clean. Cool on wire rack 5 minutes.
Remove muffins from pan and cool completely on rack.
