Beer makes batters better, meat more tender, and sauces more flavorful.

Pour some sass into your kitchen routine with this homemade chili oil that infuses olive oil with a bold blend of spices. It's a simple way to add depth to everything from dressings to grilled meats.

1 shallot, minced
2 cloves garlic, minced
1 teaspoon cayenne pepper
1 teaspoon paprika
1 teaspoon chili powder
1 teaspoon red pepper flakes
1 1/2 teaspoon cumin
1 tablespoon fresh oregano
1/2 teaspoon coarse salt
1 1/2 cup olive oil
Combine all ingredients in a heavy saucepan. Simmer over very low heat for about 10 minutes, or until flavors are extracted from ingredients.
Be careful not to let spices burn. Store refrigerated without straining, and strain as needed.

I use this for all kinds of things but it's great for stir fries because it adds lots of flavor and spice. Also good for marinating beef!
