Slow Cooker Cabbage And Potato Casserole

ingredients
2 tablespoons butter
2 medium onions, chopped
1 small cabbage, shredded
2 green apples, thin sliced
1 1/2 teaspoon white wine vinegar
1 1/2 tablespoon sugar
1 teaspoon salt
1/4 teaspoon black pepper
2 cups vegetable or chicken broth
1/2 cup leftover mashed potatoes
directions
In large skillet, over medium heat, melt the butter and saute onion til golden brown.
In crock pot, make alternate layers of cabbage and apple. Add the onion, vinegar, sugar, salt and pepper. Mix the broth into the mashed potatoes to make a thin sauce and pour it over the cabbage. Cover and cook on high setting for 3-4 hours.
