It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).
Sauteed Spinach With Tomato Sauce And Feta

ingredients
1 package (10 ounce size) fresh spinach
1 tablespoon virgin olive oil
1/4 teaspoon crushed red pepper
2 cloves garlic, minced
1/2 medium onion, diced
1 medium fresh tomato, diced
2 tablespoons chopped, fresh dill weed
OR
2 teaspoons dry dill
1/2 cup crumbed feta cheese, to taste
1/4 teaspoon salt, to taste
directions
Wash spinach and shake well. Place in a covered saute pan over medium heat. Cook for a very brief 1 to 2 minutes, turned 1 to 2 times, until the spinach has shrunk down a bit but is only about half cooked. Remove from the pan and set aside, spreading out a bit so it doesn't keep cooking.
Discard any liquid in the pan. Return pan to stove and heat olive oil over medium heat. Add crushed red pepper and garlic and saute for 1 minute.
Add onion and cook until soft, about 3 to 5 minutes. Add tomato and cook for a few minutes, until saucy. Stir in dill weed and cook for 2 minutes.
Return spinach to the pan and mix well. Cook until spinach is heated through, about 2 minutes. Remove from heat and add feta and salt to taste.
