1 1/2 pound fresh spinach
6 ounces radishes, cleaned and thinly sliced
1/4 cup water
2 tablespoons lemon juice
1/4 teaspoon salt
1/8 teaspoon black pepper
Rinse spinach under cold running water; pat dry.
Place spinach, radishes, and water in a large Dutch oven; cover and cook over medium heat 10 minutes. Drain well; transfer spinach mixture to a serving bowl.
Combine lemon juice, salt, and pepper; pour over spinach, and toss well.

just made this and loved it so did my fiancé! we both agreed it would taste really good on a hot dog with a piece of fresh ice burg lettuce and a tomato slice :) I added 3 Tbs of lemon juice though b/c I LOVE LEMON! reminded me of sourkrout
