ingredients
6 eggs, slightly beaten
1/2 cup frozen spinach or fresh spinach, cooked, drained and chopped
1/2 cup finely chopped water chestnuts
2 tablespoons bean sprouts (optional)
1/4 cup finely chopped green bell pepper
1/4 cup finely chopped onions
1 teaspoon soy sauce
1/4 teaspoon black pepper or white pepper
salt
3 tablespoons chopped scallions, for garnish
directions
Combine eggs, spinach, water chestnuts, green pepper, sprouts, onion, salt and pepper and mix well.
Drop from tablespoon into a well-greased medium-hot griddle. Lift when solid with a spatula, drop more mixture onto griddle and turn solid piece over on top of the new mixture on the griddle.
When bottom is cooked you can turn one final time if the top of the first part wasn't completely browned.
Can be prepared ahead and chilled, then microwaved for 7 minutes, or baked at 300 degrees F for 20-25 minutes.
