The name, vodka, comes from the Russian phrase zhiznennaia voda, or "water of life". It can be made from everything from potatoes to beets. It's considered to be fairly flavorless which makes it a great liquor for mixed drinks.

ingredients
3 tablespoons olive oil or vegetable oil
1 large onion, chopped
2 cloves minced garlic, more if desired
2 pounds chopped fresh or frozen spinach, thawed and squeezed
1 cup breadcrumbs or matzo meal
4 large eggs, lightly beaten
salt and pepper
1/4 teaspoon freshly grated nutmeg
OR
1/2 teaspoon cayenne, optional
vegetable oil, for frying
1 lemon, cut in wedges

Heat oil in a large skillet over medium heat. Add onions and garlic and saute until soft and translucent, 5 to 10 minutes.
Remove from heat and add spinach, breadcrumbs, eggs, salt and pepper (to taste) and nutmeg, if using. Stir, then remove to a mixing bowl.
Heat about 1/4-inch oil in a large skillet. Shape spinach mixture into 3-inch patties 1/2 inch thick. In batches, fry patties, turning once, until golden brown on both sides. Drain on paper towels.
Serve with lemon wedges.
