Pickled Spinach

Fresh spinach, tomato, and bell pepper get a pickled-style tang to them with an easy vinegar and oil mixture. And bacon. Of course there is bacon.

ingredients
2 cups torn fresh spinach leaves
1 cup diced tomato
1/4 cup diced green bell pepper
1/4 cup white vinegar
1/3 cup vegetable oil
2 slices bacon, cooked and crumbled
directions
Combine the spinach, tomato, and bell pepper in a bowl. Mix gently.
Combine the vinegar and oil in a shaker or whisk together in a bowl. Drizzle over the spinach and toss gently to coat everything in the mixture.
Divide the spinach between individual serving plates. Sprinkle with the bacon and serve immediately.

I don't know if I'd really call this "pickled" as it seems more like a tangy spinach salad. It was tasty nonetheless. I used extra virgin olive oil instead of vegetable oil because I prefer the taste.
