This cheesy dish makes a great low carb side dish.

12 (1 oz size) Muenster cheese slices
2 packages (10 ounce size) frozen chopped spinach, thawed and drained
2 eggs, lightly beaten
1/3 cup grated Parmesan cheese
1 package (8 ounce size) cream cheese, softened
salt and pepper, to taste
garlic powder, to taste
Preheat the oven to 350 degrees F. Grease a 9-inch ceramic or metal pie pan or quiche dish. If using a glass or non-stick dish, decrease the oven temperature to 325 degrees F.
Line the bottom of the pie pan with 8 slices of the Muenster cheese. Set aside.
Squeeze any excess water from the spinach and place the spinach in a bowl. Stir in the eggs, Parmesan, cream cheese, salt, pepper, and garlic powder. Mix until combined and smooth.
Spread the spinach mixture over the cheese slices in the pan. Top with the remaining cheese slices. Place the pan in the oven and bake at 350 degrees F for 35 minutes. Remove from the oven and let stand for 10 minutes before serving.
