Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.

2 tablespoons butter
2 packages spinach, chopped, frozen
1 teaspoon salt
1/4 cup light cream
2 tablespoons prepared horseradish
1/8 teaspoon pepper
1 egg, hard cooked, sliced
Melt butter in a saucepan, then add spinach and salt. Cover. Place on a high heat until steaming. Turn to a lower heat and cook until just tender. Drain.
Add light cream, horseradish and pepper, then heat. Garnish with sliced hard-cooked egg.
