Creamed spinach is a classic dish. The Five Crowns Restaurant in Corona del Mar, CA, has been serving this dish for over 60 years.
2 packages (10 ounce size) frozen chopped spinach, thawed
4 slices bacon, finely chopped
1/2 cup finely chopped Spanish onion
1/2 cup finely chopped green onion
2 cloves garlic, minced
4 tablespoons all-purpose flour
1 cup milk
1 cup half and half
1 1/2 teaspoon salt
1/2 teaspoon black pepper
Drain the spinach and squeeze out any excess liquid. Set aside.
In a deep skillet over medium-high heat, brown the bacon and spanish onion. Cook, stirring frequently, until the bacon is browned and the onion is soft. Do not drain the grease.
Add the green onion and garlic and stir for 1 minute. Remove the pan from the heat. Stir in the flour and mix well.
While stirring, slowly add the milk and half-and-half and stir until blended. Add the salt and pepper.
Return the pan to the heat and cook, stirring constantly, until thickened.
Stir in the spinach. Mix well and let cook, stirring frequently, for 5 minutes or until heated through.
Serve the creamed spinach hot.
