It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).
Baked Creamed Spinach

ingredients
2 pounds fresh spinach
2 tablespoons butter
2 tablespoons flour
1 1/2 cup hot milk
1 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon nutmeg
1 cup grated Cheddar cheese
directions
Trim spinach; wash well in several changes of water. Place in large pot with water clinging to leaves. Cover; cook only until wilted. Cool. Gently squeeze out excess water.
In medium saucepan, melt butter; add flour. Whisk and cook gently without browning for a few minutes. Add milk; bring to a boil. Add salt, pepper and nutmeg. Cook 5 minutes.
Combine spinach with sauce and half the grated cheese. Spoon into 1 1/2 quart baking dish. Sprinkle with remaining cheese. Just before serving, bake at 350 degrees F for 20 minutes or until bubbly.

This is the recipe that turned my kids from spinach haters into spinach lovers! It's so good! I use monterey jack cheese instead of cheddar though. That's the only change.
