Bloody Mary Mexican Fried Rice

The secret to giving this version of fried rice some zesty Mexican flavor is the addition of bloody Mary mix! What a great (and easy) way to zip up a simple rice side dish.

ingredients
2 cups chicken broth
1 1/2 cup long grain rice
1 teaspoon salt
3 tablespoons vegetable oil
1 cup bloody mary mix
2 tablespoons chopped green bell pepper
1 tablespoon minced onion
directions
Bring the broth to a boil in a medium size saucepan. Add rice and salt; cover, and cook over medium heat 15 minutes or until tender but not mushy.
Heat oil in a heavy skillet add the rice and stir fry 10 minutes. Add green peppers and onion and stir until well mixed. Add the bloody Mary mix. Cover and cook, stirring occasionally, for 5 minutes.
