recipe tips

For a spicier kick, add a pinch of cayenne pepper or a chopped jalapeno to the dish.

To make the dish more filling, stir in cooked ground beef or shredded chicken before serving.

If the rice is too dry, stir in a bit of chicken or vegetable broth to moisten it before serving.

To add a smoky flavor, stir in a teaspoon of smoked paprika or chipotle powder to the dish before cooking.

common recipe questions

Can I use white rice instead of brown rice?

You can substitute white rice for brown rice, but adjust the cooking time accordingly as white rice cooks faster than brown rice.

Do I have to use a crockpot for this recipe?

While a crockpot is convenient for slow cooking, you can also prepare this dish on the stovetop by simmering the ingredients in a pot until the rice is tender.

Can I add other vegetables to this recipe?

You can extra vegetables like corn, peas, or black beans. Just adjust the cooking time if needed.

Is it necessary to peel the tomatoes?

Peeling the tomatoes is optional, but it can help create a smoother texture in the dish.

Can I cook this on low instead of high in the crock pot?

It really depends on your crock pot. Some don't heat "hot" enough on low and will cause the rice to end up mushy. An alternative is to simmer the recipe without the rice or water, cook the rice in the water on the stovetop, and add the cooked rice in during the last 30 minutes or so of the cook time.

Can I make this recipe ahead of time?

You can prepare the Spanish brown rice ahead of time and reheat it in the microwave before serving. Store leftovers in an airtight container in the refrigerator for up to 2 days.

  1. Guest Foodie REVIEW:

I liked this but I used white rice instead of brown. Good seasoning though.

  2. kt magee REVIEW:

Made this recipe tonight for family. I think the portion of rice might be off since the result was gummy brown rice. I would increase the rice to a full cup and maybe add a 1/4 of water. It did result in a fairly tasty dish, but the texture was lacking.

  3. Poky REVIEW:

I did not enjoy this one. The rice cooked up lovely in the crock pot, which I worried about, that wasn't the problem it was the overall flavor. I think though it can be improved. Firstly by getting rid of that chili powder. Next time I'm going to fry up some bacon to put in it and use more salsa, less tomato sauce.
