Slow Cooker Shepherd's Pie With Creamed Corn

Shepherd's pie is a great way to use up leftover vegetables and potatoes. This slow cooked version is very flexible and lets you use a wide variety of ingredients.

ingredients

3 pounds course ground or cubed meat
2 cans creamed corn
3 pounds other veggies, any kind you want, fresh or frozen
6 cups raw shredded or mashed potatoes (frozen hash browns work really well)
2 cups cheese, any kind you like will do

directions

Put the vegetables and meat and in the bottom of a slow cooker. Mix them together. Add corn on top of meat and veggies.

Add potatoes on top, making sure the potatoes touch the sides of the dish all around. Cook 6 to 8 hours at low.

Cover with cheese and let melt.

    I, thought the recipe was really good to me...you have too cook the ground beef first..so she don't know how to cook...

    There is no way the full recipe would fit into my biggest crock so I cut it down to 5 servings. I used mashed potatoes. Can't see how raw shredded would turn out good. The recipe was kinda bland. You need to season the meat just like you would in a real shepherds pie. It was ok, but needs seasoning.

    I cut this recipe in half and used hash brown potatoes instead of shredded or mashed. I think I would have preferred the mashed potatoes though for the texture. It's basically like cooking crock pot meatloaf with yummy toppings. Mine was perfectly done in 8 hours on low. To the previous reviewer, you use raw meat. Like I said, it's like making meatloaf. Not sure why your meat wasn't done in 8 hours. Did you plug your crock pot in?

    It would have been nice if the author were more clear on some details. One, should the meat be precooked? Well, considering my crockpot has been going on high since yesterday morning to cook all of that meat, the answer is yes. Also, I have a Shepherd's Pie taht is just swimming in beef fat. Precooking would have cured that. That is a huge detail that should have been mentioned. Also, I used fresh shredded potatoes, which the author said to use whatever you desire. Since the meat needed to be cooked the potatoes sat on top and turned black. Only good thing from this waste of a huge amount of meat, it tastes good twenty four hours later. I recommend fully cooking the meat ahead of time for time's sake and saturated fat sake. I also recommend using pre cooked potatoes.

    • I can't help but wonder if there isn't something wrong with your crockpot? 24 hours on HIGH heat would turn nearly any food item, no matter how dense, into an overcooked block of inedible material. For your food to take that long to cook and be edible sounds like there was something else wrong.
