ingredients
3 tablespoons olive oil
salt and pepper
2 pounds chuck steak, sliced to an inch by 1/2 inch cube
7 medium onions coarsely chopped
5 cups mashed potatoes
1/2 can beef consomme
1/2 cup white wine
1/4 cup Parmesan cheese
12 ounces Guinness stout
5 tablespoons brown sugar
2 tablespoons vinegar
2 bay leaves
2 cloves garlic, finely chopped
directions
Preheat oven to 250 degrees F.
Place 2 tbsp oil, dash of salt and garlic in frying pan and brown meat in it. Transfer meat, oil and garlic into an ovenproof casserole.
Using the same pan salt and brown the onions adding the wine, then to the casserole.
Dissolve in same pan with remaining oil to form a roux the brown sugar, Stout, vinegar, beef consomme, parmesan cheese mixing till smooth (add flour to thicken if needed) add to the casserole with bay leaves. Cover casserole and cook for two hours, remove cover cook for 1/2 hour.
Dish into oven safe serving bowls, topped by piping or spreading mashed potatoes over the stew to form a top. Place back in oven and brown.
