Texas Barbecue Sauce

2 tablespoons butter
2 tablespoons canola oil
1 cup finely chopped onion
1 cup finely chopped celery
1 cup finely chopped green bell pepper
2 tablespoons finely minced garlic
11 cups tomato puree
1/2 cup honey
1 cup apple cider vinegar
1 cup chicken stock
2 tablespoons Worcestershire sauce
2 tablespoons chili powder
1 teaspoon cumin
1/2 teaspoon cayenne pepper
1 teaspoon black pepper
2 bay leaves
salt to taste (optional)

Beef Ribs

4 pounds trimmed beef ribs

5 pounds baby back ribs

In a small skillet over medium high heat, melt the butter, then add the canola oil, onion, celery, black pepper, and garlic. Reduce the heat and saute for about 8 minutes, or until the onions are translucent and the vegetables are soft.

Transfer the vegetable mixture to a non-aluminum saucepan. Add the remaining ingredients and slowly simmer for about 30 minutes, stirring frequently so the sauce doesn't burn.

Allow the sauce to sit for at least one hour to allow the flavors to meld. If time allows, make the sauce the day before and store covered in the refrigerator.

Prepare the grill.

Place the ribs on a plate and pour some of the sauce over the ribs. Place the ribs on the grill and cook for 6 to 10 minutes, depending on the thickness of the ribs. Baste occasionally with the sauce.

Remove from the grill and cut into serving size pieces. Spoon a bit of the barbecue sauce over the top and serve immediately.

    Am I missing something with this recipe? The sauce is phenomenal but I hadn't really read the directions completely through before making it. Are we supposed to believe we only cook raw ribs for 6-10 minutes? I've never cooked babybacks for that little time. Had to delay dinner because of this I instead steamed the ribs in the oven (put in foil pan covered with beer or broth or combo). THEN I grilled the ribs just to get them that bbq flavor and get the sauce on them. If you want tough, undercooked ribs follow the recipe. Otherwise, you'll need to add some cook time to the ribs in one manner or another.
