Grilled Lime-Cilantro Scallops With Mango Salsa

ingredients
2 tablespoons olive oil
1 1/2 tablespoon lime juice
1 teaspoon grated lime peel
1 tablespoon soy sauce
4 tablespoons chopped fresh cilantro
1 mango, peeled and diced with its juice
1/3 cup diced vidalia onion
salt and freshly ground black pepper
1 pound sea scallops
canola oil for brushing on grill
directions
Prepare barbecue or gas grill, clean grates and oil them with canola oil.
Heat grill to medium-high.
Whisk first four ingredients in medium bowl to blend. Add 2 tablespoons cilantro. Transfer 1 tablespoon to small bowl, add remaining cilantro and reserve. Mix mango and onion and reserved dressing in medium bowl; season it to taste with salt and pepper.
Marinate scallops for just 10 minutes in dressing then place them on the grill. Cook until a crust forms, about 3-4 minutes, then turn and cook on the other side until cooked through and a crust forms on the other side, about 4-5 more minutes. Transfer scallops to plates. Spoon salsa alongside.

I think the recipe has potential, but the instructions are poor. It says to put 1Tbs in small bowl with the rest of the cilantro, but never says what to do with it after that. The remaining dressing is supposed to be put in with the mango & onion salsa. Then it says to marinate the scallops for 10 minutes. Marinate in what? Not in the dressing with the mango and salsa...that would be silly. Not in the 1 Tbs dressing with all the cilantro. I Tbs isn't enough to marinate a pound of scallops, and you'd have to pick off all the cilantro before you put the scallops on the grill. Something is obviously missing.
I think you're just misunderstanding the recipe. The 1 tablespoon of reserved dressing is for the salsa. The remaining dressing is for the marinade.

Great recipe. Easy to follow and full of flavor. I have also tried it with pineapple instead of mango and it was a huge hit as well.

Made this last night for my husband and I and we absolutely loved it! The scallops were delicious but the mango salsa took the prize! It was refreshing and surprising! I have already shared this recipe with my co-workers and will be making it again this week! Delicious!
